In this case I use the same single origin coffee bean from Peru but there are two distinct roast levels that are put together after roasting each separately. The majority of the blend is Peru light roast with a smaller percentage roasted to a dark level. It adds something extra, a hidden dimension of fullness while retaining the lovely bright citrus notes of orange and lemon that light roasted Peru is known for.
